Hot recipes for cold days

Easy Aussie mini-snacks

What you need What you use
- 12 slices bread, with crusts cut off
- Margarine
- Vegemite
- 2 slices ham
- 1 cup grated cheese
- 2 eggs
- ½ cup cottage cheese
- 4 mushrooms
- 2 tablespoons chopped chives or parsley
   or tops of spring onions
- Cutting board
- Knife
- Veggie knife
- Non-stick frypan
- 12 hole muffin pan
- 1 fork

What to do - after you have washed your hands.

  1. Grease the muffin pan and the frying pan with margarine or cooking oil.
  2. Cut the mushrooms and ham into small pieces.
  3. Crack the eggs into a cup and mix with a fork.
  4. Spread each slice of bread with butter and then vegemite.
  5. Press the bread, vegemite side up, into the muffin pan.
  6. Put ham, mushrooms and chives into a frying pan and cook for 2 minutes.
  7. Take the pan off the hotplate and add the egg and cheeses.
  8. Put the pan back on the hotplate and stir for 2 minutes until the egg has started to cook.
  9. Switch off the hotplate.
  10. Spoon the egg mixture into the bread cases.
  11. Bake in the middle of the oven at 200C for 15 minutes.

ALWAYS USE A DRY OVEN CLOTH to get the tray out of the oven.

You can eat these hot or cold.

(HINT - Don't forget to clean up the kitchen and wash up when you finish.)

Chicken & Broccoli Casserole

What you need What you use
- 250gm spiral pasta (or use the tri-
   coloured one)
- Cup of frozen broccoli pieces
chicken- Cup of grated cheddar cheese
- Cup of diced, cooked chicken
- ½ cup milk
- Can mushroom soup
- Ground black pepper
- Cooking oil
- Casserole dish
- Saucepan
- Wooden spoon
- Can opener
- Oven gloves
- Sharp small knife
- Colander
- Fish slice or spatula

What to do

Before you start getting everything together, wash your hands well.

  • Heat the oven to 180C.
  • Half fill the saucepan with water and put on medium heat until it boils.
  • Take the saucepan off the heat and put in the pasta.
  • Return the saucepan to the heat and cook as long as the pasta instructions say .
  • Switch off the hot plate.
  • Remove pasta from heat and stand the pan on the sink drainer.
  • Drain the pasta into a colander that you have put into the sink.
  • Put the soup, milk and a little pepper into a large bowl.
  • wooden spoonMix in the pasta with a wooden spoon (always mix slowly so that you don't get the mixture flying out all over the place!)
  • Add the broccoli, chicken and half the cheese and mix well.
  • Grease a casserole dish or spray with cooking oil.
  • Put everything into the casserole dish.
  • Sprinkle the rest of the cheese on top. Cover with the lid and put into the oven on the middle shelf.
  • Bake for 30 minutes.
  • Clean benches, wash up and set the table while you are waiting for it to cook.
  • Use oven gloves to get the casserole out of the oven and put it onto a heat-proof mat.
  • Take the lid off and let it cool down a bit.
  • Serve and eat. A big spoon or ladle is easier to serve with.

Have an adult with you if you have to cut up chicken or other meat, or grate cheese, or look after your little brother or sister.

Hot pockets for you and a friend

What you need What you use
- 2 Tortilla or Lebanese bread or other
   round bread
- Small can sandwich tuna
- Grated cheese
- Dessertspoon of mayonnaise
- Pickles or tomatoes
- Fork
- Small bowl
- Pie plate
- Microwave
- Small plate for each
- Wooden spoon

What to do (after washing your hands)

  1. Open can of tuna and flake into a bowl with a fork.
  2. Add mayonnaise.
  3. Add tomatoes or pickles if you want to.
  4. Stir with wooden spoon.
  5. Put some of this mixture into the middle of each piece of bread and sprinkle some cheese on top.
  6. spatulaFold top, bottom and side edges of bread over the filling.
  7. Use a fish slice to lift the 'pocket' and flip it over onto the pie plate.
  8. Microwave on high for about a minute.
  9. Use spatula to move pocket onto dish.
  10. Now cook the other one.

Cheese will be hot, so leave for a minute before you start eating.

Clean up the benches, wash up the plates and wipe the inside of the microwave with a damp cloth. Leave things clean - then you'll get to do more cooking in the kitchen.!
